Many commonly consumed beverages like milk, juice, and ice cream require homogenization, especially milk, which contains a significant amount of fat. Homogenizers need to break down fat globules; otherwise, the fat and water won't dissolve, resulting in a separated, cloudy appearance. In unhomogenized fresh milk, if you let it settle, the fat will separate.

  How to buy a homogenizer?

  1. Minimum sample size for homogenization: Smaller is better, saving on materials. Some pharmaceutical raw materials cost thousands of dollars per gram. Users naturally want to use the least amount of material for a homogenization experiment. Since experimentation is repetitive, larger minimum sample sizes lead to more material waste.

  2. Uniform pressure in the homogenizer: Higher pressure isn't always better. For most materials: First, higher pressure generally allows for processing smaller particle sizes; second, higher pressure allows for processing a wider variety of materials. For example, some liquid emulsions can only be homogenized to less than 100 nm at 15,000 psi, while some pharmaceuticals and foods, especially suspensions containing a certain amount of solid particles, require at least 26,000 psi or higher to achieve the nano-level. However, some materials may coagulate under high pressure.

  3. Processing effect of the homogenizer: The goal is to achieve nano-level particle size with uniform distribution. It's not acceptable if some particles are in the nanometer range while others remain in the micrometer range. To address this, it's recommended that users request nano-level filtration and extrusion equipment from the manufacturer when purchasing a homogenizer. An inline extruder is preferable; offline extrusion is very time-consuming.

  4. Cleaning and sterilization: Imported high-pressure homogenizers are easy to clean and sterilize. Online cleaning and disinfection are recommended.

  5. Noise, safety, and the number of users are no longer primary concerns. A user list can indicate the popularity of a piece of equipment; more well-known users generally suggest better quality.
